Hawaiian Rice

Hawaiian rice is one of our family favorite side dishes! It's really good served with grilled chicken.  My kids love it so much sometimes it's the main dish.   It's super easy to make and has some of my favorite ingredients in it bacon, and pineapple!

4 cups Rice (makes about 8 cups cooked rice)
1 can Pineapple Tidbits (use the juice to cook the rice)
1 pound Bacon
1 bunch Green Onions
1 small Onion (optional)
1 small Bell Pepper (optional)

I start with cooking 4 cups of rice, with the pineapple juice and as much water as you need.  While the rice is cooking I cut the bacon into bite size pieces and  cook it in a skillet, once brown and crispy I remove the bacon and set it aside.  I next add green onions and  a yellow onion and green pepper (optional)  to some of the remaining bacon grease. (If there is a LOT I drain some off) cook the onions and pepper just until they start to get soft. I then add the can of pineapple tidbits to the onion mixture, cook until pineapple gets warm. Add the bacon back to the pan and add the cooked rice. mix everything together and you are done! Season with a little salt and pepper if you want!
